Did you miss me? Let’s eat!

I’m back, babies!  Though, looking at the recent posts, clearly, I wasn’t as far gone as I felt.  I still sound like a torch singer/2 pack a day smoker, but I’m feeling MUCH better now.

I was clearing out the freezer tonight, to make room for the OODLES of curry I made last night, and I found some pumpkin soup that I made a while back.  It had not been a hit with the fans, so I was just about to chuck it when I thought, hm, can you put grits in soup?

I decided grits would be too small, and rice would be better.  Also, the soup had been a bit thin at the outset, so that would thicken it up nicely.  It’s still cooking.  I’ll let you know how it comes out.

Let me just tell you, the freezer is very nearly magic.  It’s amazing what you can put in there, then defrost months later, and it’s still super yummy!  And yet, for saying that, there is a shocking lack of information on the Internet about good stuff to freeze.  Mostly, it’s casseroles and lasagna.  Boo to that, I say.  I want single serving food, and I want to be able to eat it within an hour of removing it from the freezer.  I will swap you all my freezer secrets (limited, I warn you) for your delightful, delicious freezer recipes.  The beauty of it is, I don’t mind spending 2 or 3 hours cooking to put stuff in the freezer, because you can make so much of it!

The best thing I ever made and freezed?  Sausage, hands down.  So good.  You can’t believe how good sausage is if you make it yourself.  We ground the meat and everything.
