Growth through alfredo
One of the goals of my high school is “Personal growth in an atmosphere of wise freedom.” That, I think, is also a really good goal when cooking.

These two containers = your basic alfredo sauce. Mark Bittman’s How to Cook Everything provides me tons of wisdom; he says to combine them like so.
Alfredo Sauce
- 2 tbsp butter
- 2 eggs
- 1/2 cup heavy cream
- 1 cup grated parmesan
- pepper to taste
Melt butter.
Heat your pasta serving bowl by filling it with hot water. Add the eggs, cream and parmesan, and beat. Grind in fresh pepper to taste.
When your pasta is done, toss it in the bowl, adding some cooking water if necessary. Drizzle the butter over, and serve.
Nice. Easy. Classic. In other words, a great starting point for whatever you feel like eating.

That night, my sweetie wasn’t feeling well. So, I added peas and bacon, two of his favorites. Whole Foods bacon is so nice and thick that I chop it before cooking (3 slices that night.) For a thinner bacon, it would probably be easier to crumble the cooked slices, and you would probably add one more. And there’s probably a whole cup of frozen peas in there. But, you know, I hear other people like broccoli. Or some sauteed onions would be nice. Pasta is such a beautiful jumping off point; you could get tons of personal growth out of it.

And there’s plenty for everyone! (Because I’m a bad cat mommy, I let Bon Bon lick the bowl.)
